You know those wonderfully delicious, sweet, yellow fruits that come in a handy little protective casing called bananas? They are one of my favorite fruits! I seem to love buying them weekly with all good intentions of eating the bananas before they go bad. But every single week I look back on my counter at the group of bananas, minus one or two, and see them all brown, spotted, and just plain past the time to have eaten them as a quick go to breakfast or snack. My son has informed me that, according to him, if there are any brown spots, at all, he no longer like them. I am not ok with continuously throwing food (money) in the trash like this so I was thinking about what all I could make with the not so yellow bananas we have at our house every week.
We do make smoothies quite often and use some of them in our smoothies but right now honestly, I just need a smoothie break. I needed another idea. My next idea to use up this last batch of spotted bananas, was banana bread of course. We happen to LOVE banana bread!
But not just regular banana bread this time. Why not put a little twist on the regular ol’ banana bread I usually make. Let’s add one more of my favorite things, peanut butter! I LOVE peanut butter! Why not add it into banana bread? It’s gotta make it a little better, right? Of course it will! Yes it does make it better and adds a nice change to regular banana bread.
That’s how this delicious creation was made. Peanut butter banana bread. My peanut butter banana bread is just completely irresistible, and it adds a little extra protein and healthy fats. Perfect for grab n go breakfasts, with coffee, a little snack, packed in the kiddos lunch for a nice surprise, or whenever else you feel the need to have a little or big slice.
It was definitely a hit at our house and I’m sure it will be at yours too! In fact, I will soon have another recipe that I made with the peanut butter banana bread. You will be pleasantly surprised! But for now give this one a try and tell me what you think. For us it was love at first taste!
Peanut Butter Banana Bread
Ingredients
- 3 whole bananas mashed
- 1/2 cup melted butter
- 3/4 cup sugar
- 2 eggs I use large
- 2 cups all purpose flour
- 1 tsp vanilla
- 1 TB baking powder
- 1/4 cup creamy peanut butter I use all natural peanut butter
Instructions

Mash 3 extra ripe bananas. set aside

melt butter for about 20 seconds in microwave

Pour sugar into a large mixing bowl

Add the melted butter and vanilla and mix well

Add eggs to the sugar mixture one at a time, stirring after each egg

Add the bananas to the mixture

Add the flour and baking powder to the wet mixture. Stir until mixed together

Heat peanut butter in microwave for about 20 to 30 seconds or until it pours easily

Pour bread mixture into greased loaf pan. Pour peanut butter and swirl with butter knife into the bread

Bake at 350 degrees for about 45 minutes or until toothpick comes out clean
